Dailies are all the material from one day of shooting (hence "daily"). The producers and director look at all the material each day and choose the best to make it to the episode that you watch. The dailies available on Whedon.info are portions of this material, usually including all the takes from one or two scenes of a particular episode. Dailies are also sometimes known as rushes.
